Cut the pork loin open in the middle, but not to the tips, with a sharp knife
Season with salt and garlic
Mix the remaining ingredients and fill the pork loin
Stitch it shut
After stitching, wrap it in twine and place in a greased baking dish
Place bacon slices on top of the pork loin
Bake in a moderate oven.
