Heat the olive oil in a pan
Season the pork loin with salt and black pepper
Fry at high heat until browned on all sides
Mix the apple cider vinegar, soy sauce, ginger, and garlic
Add to the pan
Cover and let cook for about 1.5 hours
Peel the onions and cut into rings
Scrape the carrots, wash, and cut into strips
Wash the red bell peppers, but do not peel
Remove seeds and cut into thin slices
Add the onions and carrots to the meat and let cook for 20 minutes
Add water if necessary
Add the red bell peppers and let cook for an additional 5 minutes
Arrange the meat in slices over the vegetables and red bell peppers, serving for 4 people
