Prepare ahead of time
Season the meat with salt and garlic
Mix together the honey, mustard, and vinegar
Pierce the meat in various places and pour the glaze over it
Let it rest for a day or two
Place the meat in a moderate oven (350°F), preheated, along with all the glaze
Roast for about 2 hours or until cooked through
Remove the pork from the roasting pan and slice into thick slabs
Thicken the remaining glaze in the roasting pan with cornstarch
Serve 8-10 portions.
