1 1/2 kg chicken, cut into pieces
2 tablespoons of melted butter or margarine
1/2 cup chopped onion
1 clove of garlic, minced
1 cup tomato puree
1/2 cup water
1/2 teaspoon dried oregano
1/2 teaspoon thyme
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup red wine
1 1/2 kg chicken, cut into pieces

1/4 cup red wine
Fry the chicken pieces in melted butter or margarine on both sides for 5 minutes, or until golden brown
Place the fried chicken in a baking dish and add the sautéed onion and garlic
Fry for 5 more minutes
Add tomato puree, water, oregano, thyme, bay leaf, salt, and black pepper to the pan and bring to a simmer
Mix well and pour over the chicken
Bake in a moderate oven (170°C) for 20 minutes
Baste with red wine and bake for an additional 20 minutes, or until the chicken is cooked through
Serve in 4 portions.
