1 pork loin of about 1 1/2 kg
Salt and black pepper to taste

3 tablespoons of honey
1/2 cup of dry red wine
2 tablespoons of red wine vinegar
2 large garlic cloves, minced
2 tablespoons of thyme leaves

Clean the pork loin by removing excess fat
Make a few incisions with a knife to allow seasonings to penetrate
Preheat the oven to moderate temperature (180°C)
Rub the pork loin with salt and black pepper to taste
Place in the oven on a greased baking sheet for about 1 hour
Combine remaining ingredients, in a small saucepan, bring to a boil, reduce heat and simmer for 20 minutes, stirring occasionally
Serve
Moisten the pork loin with the sauce until it's cooked through
Add a little hot water as needed to prevent the sauce from drying out
To serve, slice into portions and serve with sauce
Serves about 15 slices.
