Cut the squid into slices, cube the tomato, and separate the shimeji mushrooms
In a skillet, add a little olive oil and butter
Sauté the mushrooms for 2-3 minutes over high heat, stirring gently with a wooden spoon
Add the squid and cook for another minute
Season with salt and black pepper, and serve in a dish
Top with tomato cubes, scallion, lemon juice, and the remaining olive oil.
