Wash the peppers thoroughly
Carefully remove the seeds
Remove a bit more of the pulp to make it easy to fill them, without leaving the sides too thin
Place the peppers in a baking dish and put them in a hot oven (200°C) until they start to soften
To help the peppers keep their shape and color better, brush the inside with lemon juice and the outside with melted butter or margarine before putting them in the oven
Let it cool for a day and prepare with one or more of the fillings below, only at serving time.
