Place the flour in a large bowl or mound it on a table
Make a depression in the center of the flour and place the egg, egg white, olive oil, and salt
Mix with your fingers or a fork until you can form a ball
Moisten small pieces of dry flour with a few drops of water and press onto the ball
Knead on a floured surface, adding a bit more flour if the dough is sticking to your hands
Knead for about 10 minutes until the dough becomes smooth, shiny, and elastic
Wrap in plastic wrap and let rest for at least 10 minutes before opening
Make approximately 400g of pasta.
