4 tablespoons of olive oil

2 minced garlic cloves
6 diced tomatoes without skin and seeds
3 tablespoons of tomato extract

300g cooked, shredded chicken breast
Chopped parsley to taste
500g cooked pasta (such as fusilli) al dente
1/2 cup grated Parmesan cheese

Heat the olive oil in a pan, sauté the onion and garlic until golden brown
Add the diced tomatoes and tomato extract
Season with salt and pepper to taste
Add the cooked chicken and stir for 5 minutes, then add parsley
In a baking dish place the cooked pasta, cover with the sauce, and sprinkle with Parmesan cheese
Serve immediately.
