4 tablespoons of olive oil
1 small onion, finely chopped
1/2 red bell pepper, seeded and finely chopped
1/2 yellow bell pepper, seeded and finely chopped
1 can of crushed tomato with juice
4 sausages, cooked and sliced into rounds
1 tablespoon of pimento paste
Salt to taste
Chopped parsley to taste
400g of penne pasta, cooked al dente

1 Heat the olive oil in a pan, brown the onion and cook the bell peppers until they're tender
2 Chop the tomato and add it to the pan with the juice
Let it simmer for a bit to blend the flavors
Add the sausage, pimento paste, and salt to taste
3 Turn off the heat, sprinkle some parsley on top, and serve over cooked penne pasta
Serve immediately with grated cheese.
