Sauté the onions, garlic, and green pepper in olive oil until they lightly brown, stirring frequently
Add the spinach, black pepper, and oregano
Cook while stirring constantly until the spinach wilts but does not burn
Add the cream and mix well
Add the ricotta cheese and stir well
While this is happening, cook the macaroni as usual
Drain well
Place it back in the pot and add the sauce
Stir until everything is well mixed
Check the seasoning and serve hot in a warm dish
Serve 6 portions.
