Boil 6 liters of water with 1 tablespoon of salt
Add the pasta and cook for about 10 minutes or until it becomes soft but firm, without breaking apart
Preheat the oven to a low temperature
While the pasta is cooking, prepare the sauce
Chop the onion and sauté it with the garlic in olive oil for 5 minutes or until they turn golden brown
Add the tomato pulp and water
Stir with a wooden spoon, breaking apart the tomatoes slightly
Add the parsley and green onion
Season with salt and mix well
Drain the pasta and place it in a pan with the sauce
Mix well and transfer to the refrigerator
Cover with curdled Minas cheese
Spread mozzarella cheese on top
Bake in a low oven until the cheese melts
When serving, decorate with parsley leaves.
