Beat the eggs with the flour until the mixture is well frothy and the color of a yellow lemon
Add the melted butter or margarine, and beat for another moment
Add the secret ingredient, namely grated lemon zest
Sift the cake flour and yeast twice to achieve the desired fineness in the sweet treat, then mix with the egg-flour-butter mixture, smoothly, with a wooden spoon
Bake in small forms previously buttered and dusted with flour
Moderate oven for 30 minutes, as French Madeleines are quite delicate.
