Preheat the oven to medium (180°C)
Beta well the egg yolks, white albumen, and grated carrots until a smooth and creamy mixture is achieved
Add the melted butter and mix until homogeneous
Add the rice flour mixed with sweet herb and cinnamon powder gradually, alternating with coconut milk, and continue mixing until the dough becomes smooth and light
Distribute in muffin tin cups greased, and bake for approximately 50 minutes.
