Mix the sweet potatoes, carrots, and fish together
Add black pepper, parsley, and mayonnaise, reserving some of the latter for topping
Assemble the salad in a dish, smooth out well and cover with the remaining mayonnaise
Garnish with tomato slices and surround with chopped lettuce
Refrigerate until serving time.
