In a large bowl, season the meat with garlic, onion, salt, and black pepper
Cover with the juice and let it marinate for 30 minutes
Transfer the marinade to a pressure cooker
Seal and simmer over low heat for 30 minutes (starting from when the cooker begins to whistle)
Let the pressure release, open the cooker, add water, seal, and simmer again over low heat for another hour
Let the meat cool and cut it into slices
Combine parsley and lemongrass with the sauce from the cooker, mix well, and simmer over high heat for an additional 10 minutes or until thickened
Stuff the bread rolls with the meat and sauce mixture
Garnish with fresh thyme and serve
