Place the egg yolks in a large bowl and immediately add the mustard, salt, and pepper
Do not mix or stir
Blend the mixture with an electric mixer or a wooden spoon until smooth
Add the oil, slightly warm, drop by drop to the beginning
If the sauce breaks, add one more egg yolk or one tablespoon of hot water poured into a clean bowl, allowing it to pour slowly over the mayonnaise before adding the rest of the sauce.
