1 ripe but not too sweet mamey

a pinch of salt
black pepper to taste

Peel the mamey and cut it into slices
Cut these slices in half so that they're the same size as fried potatoes
Place them in a bowl with water and salt and let them soak for 1/2 hour
While this is happening, heat plenty of oil in a pan and let it get very hot
When the oil is hot, add the mamey slices, two or three at a time
and let them fry until they're lightly golden
Let them drain on paper towels
Beat the 3 egg whites until they form snow, season to taste
Add chopped parsley and black pepper to the egg mixture
Finally, add the yolks to the egg mixture
Put the pan with the mamey slices back over low heat, together with the fried mamey
and add the egg mixture
Let it fry for a bit more
Then, flip everything onto a serving dish
If desired, you can also make the fried eggs separately and serve them on top of the mamey.
