Place the potatoes in a saucepan, cover with water and let it simmer for two minutes
Remove the skin and reserve
Mix together mustard, garlic, lemon juice, and salt
Clean the maminha, poke it with a fork or knife, and spread the mustard mixture on it
Place the meat in a baking dish greased with butter, cover with aluminum foil, and let it marinate for 30 minutes

Heat the oven to 180°C
Baste the meat with butter, cover again with aluminum foil, and put it in the oven until it's tender
From time to time, baste the roasted meat with the sauce that forms at the bottom of the baking dish

Remove the aluminum foil, distribute the potatoes, and let them caramelize for about 30 minutes, stirring occasionally
Slice the meat and arrange it on a platter with the potatoes
Dust with paprika and parsley, and serve.
