500g of manioc
1 1/2 cups of water (360ml)
1/2 cup of finely chopped onion (75g)
3 tablespoons of olive oil
3 tablespoons of ground coriander
500g of medium-sized shrimp, cleaned
1 tablespoon of salt
2 tablespoons of lime juice
1 cup of coconut milk (240ml)
500g of manioc

Peel the manioc and grate it coarsely
In a 27cm diameter and 8cm high bowl, combine the manioc and water and mix well
Cover and microwave on high until the manioc is tender (around 10 minutes)
Mix until you get a puree, then reserve
In a low-temperature bowl of 25cm in diameter, place the onion and olive oil, mix well, and cook on high, stirring occasionally, until the onion starts to brown (around 7 minutes)
Transfer the mixture to the bowl with the manioc puree, add the remaining ingredients, mix well, and cook on medium heat until the shrimp is cooked through (around 5 minutes), stirring halfway
Mix well again and serve immediately
