3 cups of milk
1 1/2 cup of sugar
3/4 cup of rice flour or cornstarch
1 tablespoon of grated lime zest

Place the chicken in a pot, cover with water and cook until almost tender (about 20 minutes)
Drain, let cool, remove skin and bones and grind
Heat the oven to very hot temperature
In a pan, combine milk, ground chicken, rice flour, and sugar
Bring to medium heat and cook, stirring constantly with a wooden spoon
Add lime zest and stir until slightly thickened
Distribute into four terra cotta dishes and bake until toasted
Serve cold.
