4 quinces
8 tablespoons of sugar
4 tablespoons of ground cinnamon
4 tablespoons of Porto wine

Cut a quarter off the quinces and remove the seeds, forming a cavity in the center
Place the quinces in a baking dish with a little water (2 inches high)
Bake until the skins crack
Remove from the oven
Mix the sugar with cinnamon and Porto wine
Fill the cavity of the quinces with this mixture and sprinkle the rest on top
Bake again until tender.
