Bring a large pot of 5 liters of water to a boil
When the water is boiling, add the pasta, salt, and stir
Then, add the penne pasta
Cook according to the manufacturer's instructions
Drain and reserve 1 cup of the cooking water
Place the cooked pasta in a warm serving dish and drizzle with half the olive oil
Mix the grated cheese with the reserved cooking water and incorporate into the pasta
Sprinkle with lemon zest, stir gently, and finish with the remaining olive oil
Serve immediately.
