4 cups of milk

1 pound of sun-dried beef
250 grams of mozzarella cheese, grated coarse

The night before, remove any excess fat from the beef and cut it into large cubes
Soak it in plenty of water, changing the water at least twice
Drain

In a medium saucepan, place the beef, cover it with water, and let it simmer for 10 minutes
Drain and add milk
Cook for 30 minutes or until tender
Drain, let it cool, and shred

In a separate pan, sauté the onion in half of the butter until it's softened and then add the beef
Remove from heat, add chopped scallions, salt, and stir

Place the remaining butter in a medium skillet and melt it over low heat
Add mozzarella cheese and let it melt
Assembly
Place one tapioca roll on each plate and fill with two tablespoons of cheese and one portion of sun-dried beef
Fold and serve.
