1 1/2 cups of flour and wheat
3 tablespoons of butter
1/4 teaspoon of grated lime zest
1/2 cup of unsalted butter or margarine
2 egg yolks mixed with 1 tablespoon of water

In a bowl, mix together the flour and wheat with the butter and lime zest
Add the cut-up butter or margarine and work the dough with your fingers until no more butter lumps are visible
Add the egg yolks and work the dough until it's smooth
Line the bottom and sides of a 24 cm diameter mold and decorate the edge to your taste
Bake in a moderate oven (170°C) for about 15 minutes, let cool, and fill.
