2 cups of all-purpose flour
1 teaspoon of active dry yeast
1 tablespoon of grated lime zest

1 teaspoon of active dry yeast
1 tablespoon of grated lime zest
Melt the butter or margarine
Let it cool slightly and beat in the egg and sugar
Purée the peeled sweet potato in a blender
Add to the mixture previously, alternating with flour mixed with yeast
Add the grated lime zest
Mix rapidly
Refrigerate for 30 minutes
Roll out into 4 sheets over a buttered and floured cake pan of 22cm diameter, bake at moderate heat (180°C) until golden brown
Furnish to taste
