1 Preheat the oven to 350°F
In a saucepan, melt the butter over low heat
Add the flour and stir until lightly browned
Remove from heat and let cool slightly
2 Add the egg yolks one at a time, stirring constantly
Stir in the condensed sweetened milk, orange zest, and mix well
3 Beat the egg whites with a pinch of salt until stiff peaks form
Fold into the mixture
4 Pour into four buttered and floured soufflé dishes or an ungreased 1-quart baking dish
5 Bake for 20 minutes
Serve warm or chilled.
