Dissolve the yeast in warm water
Pile the flour onto a table
Create a well in the center and place the dissolved yeast, eggs, and olive oil
With a fork, mix the eggs, yeast, and olive oil first
Then start incorporating the flour until it's all absorbed
Start kneading using the palm of your hand
Knead for 10 minutes until the dough is smooth and elastic
Cut the dough in half, with one-third being larger than the other two-thirds
Let it rest
Grease a pizza pan with 35 cm diameter
Prepare the filling
Place the ground beef in a small bowl
Incorporate the butter using a wooden spoon
Heat the olive oil in a small saucepan over low heat
When warm, add the ground beef and season with salt and black pepper
Fry until browned, then remove from heat and let cool
Cut the onion into thin slices
Add the olive oil to the pan used for frying the beef
Heat, then add the onion and season with salt and black pepper
Fry until lightly browned, then remove from heat and let cool
Cube the cheese into 1 cm pieces
Remove the leaves from the parsley sprigs
With your hands, open the larger part of the dough and place it in the pizza pan
Open the dough using your fingertips, covering the entire bottom and slightly exceeding the sides of the pan
Cover the dough with the cooked beef filling
Next, add a layer of tomato, onion, cheese, and parsley leaves
With a rolling pin, open the smaller part of the dough into a round shape, matching the diameter of the pizza pan
Place the dough on top of the filling, covering it entirely
Press the edges of the dough from below and above to seal them
Cover with cloth and let rest for 1 hour
Heat the oven to moderate temperature (170°C)
Before baking, lightly beat the egg yolk and brush the top of the dough
Dust with baking flour
Bake in the oven for about 40 minutes
Remove from oven and let cool slightly before cutting into slices
For 6 people.
