Peel the melons
Remove the seeds
Cut the melon into small balls with a specialized melon baller
Heat the vinegar, water, cinnamon, cloves, and bay leaves over medium heat
Bring to a boil, then reduce heat and simmer for 5-10 minutes
Add the melon balls to this liquid until they are translucent
After about 5-10 minutes, remove the cinnamon stick, bay leaves, and cloves
Pour the melon with the liquid into a glass jar or clay pot
On the following day, strain off any excess liquid and heat it over medium heat again
Pour it over the melon again
Repeat this process for 2 more days
Do not forget to bring the liquid to a boil one last time
Let it cool before serving with meats
