1/2 cup of sugar
1 tablespoon of Cornstarch
2 cups of scalded milk
4 egg yolks, beaten
1 teaspoon of vanilla
1 cup of bittersweet chocolate, broken into pieces
1 tablespoon of unflavored gelatin
1/4 cup of cold water
4 egg whites
1/2 cup of sugar
1/2 cup of sugar
1 tablespoon of Cornstarch

Combine 1/2 cup of sugar and Cornstarch
On the side, gradually add the milk to the beaten egg yolks
Add the sugar mixture to the warm milk and cook over low heat, stirring constantly, until it thickens slightly
Remove from heat and stir in vanilla
Remove 1 cup of this cream and add the chocolate, stirring until melted
Soften the gelatin in cold water and mix with the remaining hot cream (without the chocolate)
Refrigerate until thickened slightly
Beat egg whites until fluffy
Gradually add 1/2 cup of sugar, beating well
Combine with the gelatin mixture, stirring gently
Pour into a container
Add the chocolate cream and stir lightly to combine
Garnish with chocolate shavings.
