After soaking the beans for 12 hours, place them in a pot with cold water, salted and cook for about two hours over moderate heat
When cooked, remove from heat, drain and blend through a strainer
In a pot, heat half the olive oil and sauté the chopped onion, carrot, and parsley until softened
Add the tomato extract
Season with salt, add the bean puree and dilute with 2 cups of hot water
Bring to a boil and pour in the uncooked rice
Note that once cooked, the minestrone will be quite thick
Remove from heat, add the remaining olive oil and grated cheese
Serves six.
