Cook the sweet potatoes in boiling water for 7 minutes after bringing to a boil
Drain, let cool, and grate with a coarse grater
Mix together the sweet potato, mozzarella cheese, salt, and chives
In a small non-stick skillet greased with butter, place one portion of the mixture
With a spatula, shape it well in the skillet
Over medium heat, cook for 2 minutes on each side, or until golden brown
Repeat the process with the remaining mixture
Place a spoonful of cream cheese on top of each pancake, fold, and serve immediately.
