400g of chilled mascarpone cheese

In a small saucepan, heat the sugar and water over low heat, stirring constantly, until the sugar dissolves
Stop stirring and cook on medium heat until a clear caramel forms
Add 2 pinches of red pepper flakes and white vinegar, and cook for an additional two minutes
Remove from heat and, using a fork, slowly dip the nuts into the caramel
Allow the excess caramel to drip off the nuts and transfer them to a surface lined with parchment paper (you can also caramelize the nuts ahead of time and store them in an airtight container)
Arrange the mini pancakes on a large plate or tray, place 1 tablespoon of mascarpone cheese on each one, and top with a caramelized half-nut
Dust with remaining red pepper flakes and serve.
