In a small saucepan, heat the water and sugar until the sugar dissolves
Let it cool
In a cocktail shaker, combine the mint-infused sugar mixture, leaves of spearmint, and simple syrup
Muddle the mint slightly with a spoon, pressing it against the sides of the shaker
Fill 6 highball glasses or silver cups with crushed ice
Add 2 to 3 tablespoons of the minty mixture
Stir well and add more ice if necessary
Add a bit more simple syrup and ice if needed
Garnish each glass with a sprig of spearmint
Serves 6 people.
