1 peeled and seeded cucumber, diced
1 small Amazonian mango, peeled and diced
1 small diced carrot
3 pimientos de Mojarra, seeded and diced
1/4 cup of green seasoning (see recipe below)
1 1/3 cups of white wine vinegar
1 1/2 tablespoons of mustard
1 tablespoon of salt
1 peeled and seeded cucumber, diced

1 1/3 cups of white wine vinegar
1 1/2 tablespoons of mustard
1 tablespoon of salt
In a blender, combine all the ingredients
Blend until everything is well chopped, but not too smooth
Place the mixture in a pot and heat it up over low flame
Transfer to a sterilized container with a capacity for 1 liter
Close hermetically and refrigerate
It can be stored for up to 2 weeks
Makes 3 cups.
