1 cup of fresh or canned small mushrooms, chopped
1/4 cup of finely chopped red onion
1/4 cup of finely chopped red bell pepper
1/4 cup of chopped fresh parsley
1/2 teaspoon of dried oregano
1/3 cup of olive oil
2 tablespoons of lemon juice
to taste: salt, black pepper
1 package of 500g lasagna noodles
1 cup of fresh or canned small mushrooms, chopped

In a small bowl, combine the mushrooms, onion, bell pepper, parsley, and oregano
Whisk together the olive oil, lemon juice, salt, and black pepper separately
Add to the previous ingredients
Cover and refrigerate for 1 to 2 hours
Mix with cooked macaroni al dente, drained, and still warm
Serving immediately
Serve in four portions.
