In a blender, beat the egg with 1 tablespoon of freshly squeezed lime juice
Add the oil, starting with a drop at a time and blending continuously until a firm mayonnaise forms
Add the mustard and blend well
Peel the avocado, remove the pit, and cut into small pieces
Blend with the mayonnaise and remaining lime juice until smooth, then taste and adjust seasoning as needed
Season to taste with salt and black pepper
Sprinkle with chopped green onion and serve
