Cook the finely chopped onion and prosciutto in moderate heat with butter until the onion is golden yellow
Once the onion is cooked, pour in the vinegar and let it cook until it evaporates
Add the washed and pitted plums, 1.5 cups of water, salt, pepper, and bay leaf, and let it simmer slowly with the lid on until the plums are tender
If desired, you can add a little beef extract
When the plums are cooked, blend them with their sauce and return everything to create a thick sauce that will accompany lamb chops.
