Anchovy Mayonnaise Sauce (Capricciosa)

    For the basic mayonnaise: In a bowl, whisk together 2 egg yolks and slowly pour in 1 cup (240 ml) of oil while continuously whisking.

    Alternatively, use an electric mixer on low speed to mix the ingredients.

    Add the lemon juice, salt, and pepper to taste, then mix well until the desired consistency is reached.

    Cover and refrigerate. Reserve.

    Process the onion and red bell pepper in a blender until smooth.

    Heat 1 tablespoon of oil in a pan over medium heat for 3 minutes, whisking constantly.

    Add the anchovies and let cool.

    Combine with the mayonnaise and mix well.

    Use to accompany rice salad or mixed with cooked eggs and fish.
