1 cup of sugar

1 tablespoon of vanilla

Spread the sugar in a skillet
Place over low heat, without stirring, until the sugar melts and forms a golden-brown liquid
Gradually add the boiling water, stirring until the caramel dissolves
Cook for about 5 to 7 minutes to achieve a thick syrup
Remove from heat and add vanilla
Serve hot or cold with puddings, roasted fruits, sorbets
Use 1 cup.
