3 chive bulbs without skins

Soak the chive bulbs in milk, squeeze to remove excess milk and strain through a sieve along with the egg yolks
Mash the garlic clove in the bowl where you will combine the chive mixture
Add the oil, drop by drop, stirring constantly
Season to taste with salt, vinegar or lemon juice, and sour cream
Add the chives just before serving
