For ice cream, puddings and cakes:
1 cup of cocoa powder
1/2 cup of all-purpose flour
1/2 cup of confectioner's sugar sifted into the cup
1 cup of heavy cream fresh in a can or long-life carton
1/2 cup of unsalted butter cut into small pieces
1 tablespoon of vanilla

In a saucepan, mix together the cocoa powder and flours
Add the heavy cream and butter
Bring to a simmer
Cook for 1 minute, stirring constantly
Remove from heat
Let cool for 5 minutes
Add the vanilla
Pour into glass jars with lids and store in the refrigerator until serving
This sauce can be heated or served chilled
Yield: about 2 cups or 32 tablespoons.
