Wash the mushrooms carefully
Cut off the tough part of the stems
Chop the rest of the mushrooms into small pieces
Sauté in butter for 5 minutes
Add flour, salt, pepper, and milk
Stir until thickened
Add lemon juice and white wine
Serve with soufflé, if desired
