1 tablespoon of Cornstarch
1 cup of orange juice
1 1/2 tablespoons of lime juice
1/2 cup of sugar
1 1/2 tablespoons of grated orange peel
3 cups of mango, cut into cubes

Dissolve the Cornstarch in orange juice
Add the lime juice and sugar
Bring to a simmer over low heat, stirring constantly
Once it forms a thick and transparent gel-like consistency, remove from heat
Add the grated orange peel and mango
Let it cool and refrigerate for 2 to 4 hours
Serve with vanilla ice cream, sprinkling shredded coconut.
