Combine the sugar and water in a saucepan
Heat to boiling point
Let it boil for 4 minutes
Add the lemon juice, water, and egg white
Stir well
Chill in the refrigerator or freezer until firm
One hour before serving, let it come to room temperature for 30 minutes
Blend in a blender or food processor
Return to the refrigerator or freezer at serving time
Serve in bowls with a spoonful of orange liqueur, vodka, or champagne
