Saute the onion, olive oil, pumpkin, and tomatoes over high heat
When boiling, reduce heat and cook for an additional 5 minutes or until the puree becomes smooth
Blend the sauce in a blender, add lemon zest, and mix
Return to the pan, heat, and add heavy cream, salt, and Parmesan cheese
Mix well and serve.
