1 piece of strong ginger
1 cup heavy cream
juice from 2 medium limes
salt to taste

Peel and grate the ginger
(If desired, use pre-prepared ginger in jars)
Use 6 tablespoons of grated ginger for 6 tablespoons of lime juice
Mix well
Beat the heavy cream until it holds its shape when lifted from the whisk
Add to the mixture above
Season very lightly with salt
Stir well before refrigerating
