Blend while disengaging occasionally to scrape the sides of the cup
Check the seasoning and add more lime juice if desired
Transfer to a serving bowl and serve with crunchy vegetables like carrots, radishes, sweet herbs, bell peppers, cucumber, etc
Do not prepare the sauce more than 6 hours in advance
