2 soup spoons of butter or margarine
2 soup spoons of all-purpose flour
1 cup of milk
1/2 teaspoon of salt
black pepper to taste
2 cups of peeled and chopped tomatoes
1 chopped onion
3 sprigs of parsley
1/2 teaspoon of salt
1/4 teaspoon of baking soda

Melt the butter and combine with flour
Stir well
Remove from heat and gradually add milk, stirring constantly
Return to heat and season with salt and pepper
Let thicken, stirring constantly
Cook the tomatoes, onions, and herbs together for 5 minutes
Let the mixture cool and add white sauce and baking soda
Mix well
This sauce can be served over polenta, cheese soufflé, or egg tart.
