4 medium tomatoes, peeled and diced (120g each)
1 medium green pepper, cut into strips (120g)
1 small onion, finely chopped (40g)
1/2 teaspoon paprika
to taste
1/2 teaspoon oregano
1/8 teaspoon black pepper
2 tablespoons water
1 tablespoon cornstarch

In a refrigerator-safe bowl, combine all the ingredients except for the water and cornstarch
In a small bowl, whisk together the water and cornstarch
Add to the vegetables
Cover with a plate
Microwave on high for 5 minutes
Stir
Let it cook for an additional 4-8 minutes or until the pepper is tender and the sauce has thickened slightly
Stir one or two times
Serve with fish, meat, or poultry
Yield: 2 servings (20 tablespoons)
